Cardamom Allspice Dry Rub

Ingredients:

• 5-6 Pods of Black Cardamom
• 1 Tbs Allspice Seeds
• 1 Tbs Coriander Seeds
• 1 Tsp Cinnamon
• 1 Tbs Light Brown Sugar
• 1 Tsp Chili Powder
• 1 Tsp Fresh Ground Black Pepper
• 1 Tsp Kosher Salt

Combine everything in a spice mill. Pulse until everything is well combined.

Great on Chicken or Pork

Ancho Guajillo Chili Dry Rub

This dry rub uses both ancho and guajillo chili and is great for chicken or pork.

Ingredients:

• 1 Tbs Ancho Chili Powder
• 1 Dried Guajillo Chili Pepper, stem removed
• 1 Tbs Ground Cumin
• 1 Tbs Light Brown Sugar
• 1 Tbs Whole Coriander Seed
• 1/2 Tsp  Ground Cinnamon
• 1 Tsp Kosher Salt
• 1/2 Tbs Whole Peppercorns

Toss everything into a small food processor and pulse until well blended.
