Mango Cabbage Slaw Recipe

Mango Slaw

So I wanted to make a mango jicama slaw but, alas, my local grocery had no jicama. So I had to improvise and went back to cabbage, for the crunch, and added some red onion to balance the sweetness of the mango. We took it with us to a neighbors for Saturday barbecue and it got a few compliments, which made me happy. I'm generally easy to please.

Ingredients:

  • 1/2 Head Green Cabbage, shredded
  • 1 Ripe Mango, julienned
  • 1/2 Large Red Onion, Cut into slivers
  • 1 Lime, Juiced
  • 1 Tbs Rice Wine Vinegar
  • 1/4 Cup Extra Virgin Olive Oil
  • 1 Tsp Ground Coriander
  • 1 Tsp Kosher Salt
  • 1/2 Tsp Fresh Ground Black Pepper
  • 1/2 Cup Chopped Fresh Cilantro

Toss cabbage, mango, and red onion in a large bowl.

Make the dressing by mixing lime juice, vinegar, olive oil, coriander, salt, and pepper until well combined. Pour dressing over cabbage mixture and mix well. Chill for at least 1 hour and toss in fresh cilantro just before serving.
