Roasted Sweet Potatoes Recipe

I came across a recipe for Grilled Sweet Potato Salad over at SeriousEats.com. Considering it's nearly summer and when the weather is warm I mostly grill everything, I decided to try it. I ran into a bit of a problem, however, because I was being particularly over ambitious and simply had way too many dishes cued up for the Weber.
So I had to adapt and in the course of adjusting my plans, the recipe was adjusted a bit as well. The results were quite good, though I still plan on giving the SeriousEats version a try.
Ingredients:
- 2 Large Sweet Potatoes
- 1/4 Cup Extra Virgin Olive Oil
- 1 Tbs Cumin
- 1/4 Tsp Cinnamon
- 1/2 Tsp Kosher Salt
- 1/4 Tsp Fresh Ground Black Pepper
- 1 Lime
Preheat oven to 375 degrees.
Combine Olive Oil, Cumin, Cinnamon, Salt and Pepper in a small bow. Mix well.
Peel potatoes and slice into 1/2 - 3/4 inch rounds. Brush each potato slice on both sides with Oil mixture and place on a baking sheet. Roast in oven until they begin to caramelize, flipping the rounds once about half-way through, about 45 minutes total.
Transfer potatoes to a serving bowl, squeeze fresh lime juice over them and drizzle with a bit of the remaining cumin-oil. Serve with lime-wedge garnish.
